Avo-goodness

I have found myself in more than one argument over how horrible avocado is. It’s tasteless and doesn’t add any value to a meal (apparently). I think avocado is brilliant, it just depends how you use it. Avocado is also really good for you…they are packed with nutrients, heart-healthy monounsaturated fatty acids, potassium and fiber.

Here are a couple of recipes I’ve tried and love:

Of course you know about guacamole which is really simple to make. If you have surprise guests making this and serving it with tortillas (or ola), veggie sticks and a bit of cheese is a quick save. I like this easy recipe from Jamie Oliver

Breakfast:

Get all the energy you need with these delicious breakfast options

Avo-Egg breakie: you’ll need an avocado, 2 eggs, chives (or green onion) and salsa or chilli sauce.

Breakfast smoothie that’s great for someone always on the go: you’ll need…

  • 1 cup ice
  • 2 tablespoons honey (or more if you like. You could also use agave)
  • 1/2 cup milk (try coconut mil…mmmm)
  • 1/4 cup water
  • 2 whole avocados

Just blend it till it’s well mixed and nice and creamy.

Lunch/Dinner: 

Avocado Pasta: you’ll need…

– 1/2 pound pasta
– 1 avocado
– 1/2 cup spinach
– 1/4 cup basil
– 1 T olive oil
– 1 clove garlic
– 1/2 cup reserved pasta liquid
– 2 T slivered almonds
– pinch of salt

In a sandwich. You could try this easy Chipotle-Avocado sammich. You’ll need…

  • One 15-ounce can red kidney beans, drained
  • 1 chipotle in adobo, finely chopped, plus 1 tablespoon sauce
  • 8 slices whole-grain bread, toasted
  • 1 avocado, sliced
  • 4 radishes, sliced
  • 4 leaves escarole
  • 1 cup sprouted beans
  • Kosher salt and freshly ground black pepper

Dessert:

I love this recipe from Nutrition Stripped for a Dark chocolate avocado mousse. So good.

You’ll need…

  • 2 large avocado (or 4 small)
  • ¼ cup of unsweetened vanilla almond milk (I used regular milk)
  • 2 tablespoons of raw organic cocoa powder
  • ½ bar of your favorite high quality dark chocolate, melted
  • 2-3 dates, pitted
  • 1 tablespoon of coffee/espresso
  • ½ teaspoon of organic vanilla extract
  • GARNISH //
  • 1 tablespoon of cacao nibs (optional topping)
  • 1 tablespoon of shredded coconut (optional topping)
  • fresh berries

Raw chocolate avocado slice: you’ll need…

  • 1 cup of dates
  • 1/2 cup of walnuts
  • 8 tablespoons coconut oil
  • 4 medium avocados
  • zest of 1 orange
  • 150g 100% raw cacao powder
  • 3 tablespoon of honey

Some people enjoy avocado with a bit of salt or sugar or add it to their meal in slices. Give some of these a try and maybe you’ll come to love avocado a little [more], and gain some health benefits as well.
